Egg White Powder, or Powdered Egg Whites are dried egg white (pure albumen). Spray dried, pasteurised egg white derived from hen eggs. Major features of this relevant product quality are good water solubility and excellent foaming properties. So ideal for cooking and baking and a great source of protein. Also it can be reconstituted by mixing the powder with water. The reconstituted powder whips like fresh egg white and, because it is pasteurised, can be used safely without cooking or baking it. So for each egg white you need in your recipe, use 2 level teaspoons powdered egg white plus 2 tablespoons of warm water.
