Preheat the oven to 175 C
Prepare the silicon doughnut mould.
In a medium size mixing bowl combine all the wet ingredients: eggs, melted butter, unsweetened almond milk, vanilla essence, lemon juice, lemon zest, mix thoroughly by using a hand whisk.
Use eggs that are room temperature. Add a tsp of cinnamon if you are making “Cinnamon Sugar” Doughnuts.
Fill up the doughnut moulds, I got 12 medium size doughnuts out of this batter. The easiest way to fill the mould is to spoon your batter into a piping bag and pipe the batter into the moulds but it can be spooned into mould too.

Bake the doughnuts for 25-27 minutes at 175C on the lower shelf of your oven.
To glaze the doughnuts I made Keto Sated Caramel, I also rolled some in xylitol and cinnamon, another batch was glazed with Keto White chocolate, and I also made some dark chocolate ones!
Its a such a simple, quick recipe, yet makes some very tasty Keto Doughnuts!!!
