160g almond flour, 30g oat fibre , 75g unsalted butter , 1 medium egg , 1/4 tsp baking powder, 1/4 tsp salt, 2 tbsp water,

Instructions

Step 1

 

Start with measuring out your ingredients. Freeze the butter if you would like the crust to be flaky. It is possible to put this pie crust together with softened butter, it will be still just as nice but it won’t have the flaky texture if you don’t use hard (frozen butter ) Don’t need to chop it into small cubes though if you wish you can sure do that. I freeze the butter and grate it on a cheese greater.

Slightly beat the egg with the 2 tbsp water, just use a fork.

Preheat the oven to 175C and line the baking tin with parchment paper.

I love making it in a cake tin, its just so easy to click open the side of the tin and slice the pie and again click it back on, cover and store in the fridge.

Step 2

In a medium size mixing bowl mix all the dry ingredients:

almond flour or ground almonds, oat fibre, salt, baking powder.

Using your hand or a spatula mix in the egg mixture.

It will be like crumble, quickly mix in the frozen grated butter, don’t over work it, do it fast so the butter won’t melt.

 

Step 3

Using your hands, press the dough into the prepared tin, make some holes into the crust using a fork to avoid puffing up.

Pre-bake the crust for 15 minutes at 175C on the lower rack of your oven.

Step 4

Fill the pie with filling of your choice.

I always precook the filling but its not necessary.

My filling here was :

On a small bit of butter I put on some leek, chopped smoked bacon, 3 chicken breast (diced), a bit of garlic, added some salt and cracked black peppers. Cooke it for about 10minutes under a lid, then I added some chopped broccoli and sliced peppers.

Cooked it for another 5 minutes.

In a small bowl I mixed 250ml double cream, 1 medium egg, and 1/2 cup grated cheddar.

I poured the cream mix into the chicken mix and gave it another 5 minutes cooking.

Then pored my filling into the pre-baked pie crust.

COVERED IT WITH kitchen foil and BAKED it FOR 30 MINUTES at 175C, and took the kitchen foil off to give it a bit of colour and baked it for another 5-10minutes.

Step 5

Take it out of the oven and wait just a few minutes before gently removing the ring.

Slice and enjoy your KETO PIE.
